Skillet Grilled Catfish

This incredible catfish is flavorful and easy to fix. You can substitute tilapia or swai.

Skillet Grilled Catfish

2 TBS flour
2 TBS cornmeal
1/4 tsp onion powder
1/4 tsp dried basil
1/4 tsp garlic salt
1/4 tsp dried thyme
1/2 tsp pepper
1/8 to 1/4 tsp red pepper
1/8 cup (2 Tbs) butter
2 large catfish fillets

Mix the flour, cornmeal, onion powder, basil, garlic salt, thyme, pepper and red paper  in a gallon storage bag or bowl.  Add each filet at a time covering to coat. Melt the butter in a cast iron pan large enough to handle the catfish with room.  Add the catfish and fry on each side for approximately 10 minutes over med/high heat. Don’t walk away from this! Fish will flake easily with fork when done.  2 servings/25 minutes
