Broccoli & Cheese Casserole

This recipe was a great success at our Sunday potluck.  It was cooked before church and reheated, it tasted just as good.  It’s a keeper!

Broccoli and Cheese Casserole

3 eggs
1 cup cottage cheese
1/2 cup cheddar cheese
3 Tbs flour
2 tsp salt
dash of pepper
1 pound frozen broccoli (or two 10 oz packages)

Beat eggs, then add cottage cheese, cheddar, flour, salt and pepper. Beat well together. Cook broccoli as directed and drain well (important to drain really well).  Add egg mixture. Pour into greased baking dish and bake at 350º for 30 – 40 minutes.  Serves 6-8
