Blackened Fish over Rice

These spices can be bottled and used at your whim for blackened fish or chicken!

1 TBS Paprika
1 1/2 tsp onion powder
pinch of garlic powder
1 tsp black pepper
1/2 tsp cayenne pepper or to taste
1/2 tsp dried oregano
1/2 tsp dried thyme
1/2 tsp celery seed
1/2 tsp salt (kosher if you have it)

In a small jar mix the spice blend with shaker cap if available. Coat the fish fillet (catfish or tilapia both work) with spice mixture  and let sit at room temperature for no longer than 30 minutes. Make rice while waiting and prepare veggies.  Heat heavy skillet (cast iron preferred) over high heat. Add 2 tsp oil to pan and heat until ALMOST smoking. Very carefully place fillet in the pan and cook for about 3 minutes (until flaking). Remove from pan and serve with lemon juice.  Serve over rice with your choice of veggies for a wonderful dinner.
