1 c baking mix (bought or make your own)
2/3 c milk
1 small egg (if possible)
1 Tbs oil or shortening
Optional chopped pecans
Heat waffle maker. Mix ingredients and when hot, pour 1/4 of the mixture into your waffle maker (as size permits). You can add chopped pecans before closing waffle maker for cooking. Extra pecan or plain waffles can be frozen for another meal or dessert base and reheated in the toaster.
Alternative: Bacon Waffles – Exclude oil or shortening from recipe. Cut bacon slice in half. After pouring batter into the waffle maker add one slice of bacon across the top. Cook per waffle maker instructions. Makes approximately 4 waffles depending on size of your waffle iron. Do not freeze bacon waffles.
